Master bartender Tomoyuki Hojo has devoted many years to studying the history and evolution of Japan's cocktail culture. He was also among the first Asian bartenders to earn international recognition in a profession long dominated by the West.

Mr. Hojo believes that people who drink alcohol and those who do not should be able to share the same space and enjoy a rich, memorable experience together. Through his work, he also hopes to elevate Japan's dining culture as a whole while contributing to its continued innovation and evolution.
